FITBRū is a line of premium, functional, cold brewed coffees and teas that are shelf-stable. Our lineup currently consists of four different flavors, and we have a lot of amazing recipes and formulas that we are excited to introduce in the future.
Our functional cold brew coffees start off a little different than most cold brews on the market in the fact that we use a single origin Mexican blend that consists of primarily 100% Arabica Chiapas. We roast to a very unique temperature that is typically not even considered for cold brew due to the release of alpha-acids and oils that are naturally released from the coffee bean at this temperature. This release of alpha-acids and oils help us achieve cold brew base that is way less acidic and full of flavor. These acids and oils start to emit from the bean at higher roasts temps and interestingly enough the darker the roast the less acidic the brew will be.
From there we use a very specific grind ratio of cold brew coarse to espresso fine. Our proprietary grind ratio allows us to achieve a higher level of dissolved solids and caffeine which further builds out our flavor and feeling. After grinding we let our beans aerate for at least 24 hours. We feel that the introduction of oxygen to the bean surface areas that were previously hidden delivers smoother notes in our final product.
Once our grounds have been aerated, we use an immersions method for cold brewing, which means that our grounds are in full and constant contact with our water. We let these steep for 18 hours at a calculate temperature to achieve a very coffee forward yet smooth cold brew that has a very high level of caffeine.
From there we filter our cold brew twice. Our double filtration allows us to remove more undissolved solids that would normally remain in the final product. These undissolved solids directly affect the level of bitter tannins, so removing them makes our brew smooth!
